Wilks Soup Recipe

This morning the family decided to meet up and go wilks hunting. " eewwwwwwww who want to touch those things!" my thoughts screamed. However, the explorer in me still got dressed and my hubby and I headed out to breakfast then to meet the family by the sea side.

Ingredients

2 cups wilks, removed from shell and cleaned

6 cups water

1 small onion, cut fine

1 small yellow or red sweet pepper, cut fine

1 tbsp butter or coconut oil

2 medium potatoes, diced

2 tbsp, tomato paste

6 cups water

Salt and pepper to taste

Your choice of herbs - thyme, oregano or cilantro

Lime, scotch bonnet and pickapeppa for serving

**cassava can be substituted for potato

Directions

[1] Boil 6 cups water, add salt to taste, add wilks for 10 minutes. Drain and shock in ice bath. Set aside.

[2] Pour butter or coconut oil in saute pan, heat and add onions and sweet pepper. Cook until soft, 3 - 4 minutes. Add potatoes and cook for an additional 5 minutes.

[3] Add ¼ cup water to deglaze the pan and then pour the remaining water, tomato paste and herbs in the pan and bring to a boil then turn down to a simmer. Return wilks to the pan and cook for 10 minutes.

[4] Remove wilks from pan and set aside. Cook soup until potatoes are tender. Salt and pepper to taste.

[5] Return wilks to pan and allow to cook an additional minute. Remove from heat and serve with lime scotch bonnet or pickapeppa sauce.
